This is not jam in the ordinary sense, it is a revival of a centuries-old family Moldavian tradition.
We take white courgettes and, through a slow two-day process, turn them into a clear, bright preserve.
Each piece is cut by hand, giving the jam its texture and structure. Fresh lemon keeps the flavour clean and balances the sweetness.
Serving:
Works well with soft goat’s cheese or ricotta. Also good with pastries or as a light glaze for desserts. Perfect on toast or with Greek yogurt or morning porridge.
Ingredients:
White courgettes, sugar, lemon.
Storage:
Store in a cool, dry place away from direct sunlight.
Once opened, keep refrigerated and consume within 3 weeks.
