The year has only just begun, and we are ready to share a small but important update. Recent work focused on testing our traditional courgette jam recipe, and the results met our expectations.
The recipe required several rounds of testing across multiple batches. Each batch followed the same ingredients, but preparation methods varied slightly. These variations affected texture and balance, and they helped clarify which approach best reflects the result remembered within our family. Ingredient choice also proved significant, as the specific variety played a key role in achieving the intended flavour.
The most recent batch produced only a small number of jars. This batch represents the most valuable outcome of our testing so far. Internal tasting will begin shortly with close friends and family. Further adjustments may follow before the next batch is prepared.
A fresh batch of courgette jam for sale will come later. We will announce availability once everything is ready. For now, we wanted to share this progress and mark the step forward it represents.
